I’ve just reduced some jars of lemon curd which are up to their ‘best before’ date. Why not buy one to make the following dessert which is a great standby to have in the freezer:
Whip the cream and then stir in some broken/crumbled meringues and the lemon curd until well mixed. Spoon mixture into suitable containers, smooth the tops and freeze. Take out of the freezer about 10-15 minutes before you’re ready to eat and when defrosted just a little, cut into slices. Decorate with fruit as desired.
