In some parts of the country, lanterns made from pumpkins were known as ‘punkies’ and used on 31 October during Halloween processions. Why not have a go at making your own punkie. Locally grown pumpkins are available at the community shop at prices ranging from 75p to £2.75 (the more expensive pumpkins will need two people to carry them home).
Use the scooped out flesh to make the following salad:
Cut about 1k of pumpkin flesh into chunks, drizzle with olive oil, season and roast for 35 minutes or so until the edges are beginning to char.
Peel and cut two pears into long slices and saute in 50g butter with finely chopped rosemary until the pears are slightly brown but still have some bite.
Scatter the cooled pumpkin and pears on top of rocket,or watercress, or mixed leaves.
Sprinkle with slivers of parmesan.
